Jamaican-style Pork Stew

Ingredients

4 Tsp olive oil

1.5# center-cut pork chops, cubed

2 Tsp flour

2 medium onions, thinly sliced

2 cloves garlic, crushed

4 Tsp (light or dark) rum

2 (16 oz) cans tomatoes, drained and crushed

1/4 tsp crushed red pepper flakes

1 tsp freshly ground black pepper

1/4 tsp ground allspice

2 cups beef broth

4 small new potatoes, diced

2 Tsp dark molasses

salt (to taste)

cooked rice (optional)

Directions

Heat oil in pan. Dust pork with flour and brown in oil, a few pieces at a time. Remove with slotted spoon and set aside.

Saute onion and garlic 5-6 minutes. Add rum and cook over high heat one minute, scraping up any browned bits. Return pork to skillet. Add tomatoes, red pepper flakes, pepper, allspice, and beef broth. Mix well. Bring to a boil and add potatoes.

Reduce heat and simmer, covered, 40-60 minutes. Remove cover and simmer 10 minutes more to thicken sauce, if necessary. Stir in molasses and season with salt to taste. Serve plain or over rice. Makes 4 servings.Does anyone here have any advice and tips on cooking pork chops on a stove range?
Well just fry them like you always do, then remove from pan, throw some mushrooms and onions in the pan with butter and saute. Thicken it will a little butter then add cream and broth or water. Salt and pepper well then simmer the chops in this.

Or you can cook chops, the saute mushrooms in the pan and add a little onion and redwine and some broth, then let the chops simmer in them.

Or do Asian style with a little soy and ginger and sugar.
